kernel 2.6.5

Unlike the arch/* directory the makefile for the sound subsystem is not
robust about missing architecture subdirectories.

delete arch/{arm,sparc,...} and make mrproper succeeds

delete sound/{arm,sparc,...} and make mrproper fails

This is expected.

This is expected.

The logic used to select different architectures are different for
the two places, and there is no way to tell kbuild to traverse only
a limited subset of directories in sound/.
So what you ask for is not possible (with todays kbuild).
