[PATCH] MAINTAINERS: arch/nios2: Add Simon Schuster as co-maintainer

Add Simon Schuster as a co-maintainer for the nios2 architecture and
mark it as supported.

In a discussion concerning the future of the nios2 architecture in the
kernel [0], I was encouraged to apply for co-maintainership of
arch/nios2 because of our continued interest in this architecture for
the foreseeable future. It was further suggested to mark it as
"supported", as I do so as part of my day job at Siemens Energy. Thus, I
hereby apply for co-maintainership of arch/nios2.

Actually, I will take it. I do have 1 pending patch for NIOS2.
